Make science work for kalabasa

It is with pride to be enlightened that a government owned – Livelihood Skills Training Center (LSTC) is promoting the lowly kalabasa (squash) for different food-based applications.

I only wished however, the scientists who came up with these products would bring up the years of development through the science of sensory science testing, analytical testing, food technology, and food ingredient expertise with the creativity of consumer research, concept development, and culinary artistry.

This declaration to the food community would give a much needed credence not only for the people behind it but to the Philippines itself as a place for adventure in gastronomy.
