Attack dogs

It is impossible to teach an old dog new tricks as they say especially attack dogs I would imagine. The dog handler normally rewards them with something these dogs like, and so they attack on command.
How does a person especially those so-called “officer of the court” or members of the bar allow himself or herself to act like an attack dog if they have any remaining self-respect?
