Bangus Fest to feature pigar-pigar delicacy

PIGAR-PIGAR, a uniquely Dagupeno meat delicacy, will have a share of the limelight during the 2009 Dagupan Bangus Festival from April 15 to May 1.

Vice Mayor Belen Fernandez, chairman of the festival, met with the pigar-pigar eatery owners on Feb. 25 to finalize preparations for the first ‘Pigar-Pigar’ Festival on April 17.

Sold at night by joints along the entire stretch of Galvan Street, Pigar-pigar is deep-fried thin slices of beef or carabeef seasoned with salt and onions, usually served with plain rice.

Pigar-pigar is as popular as the kaleskes, another local delicacy served in eateries in Barangay Herrero Perez, composed of animal spleen, heart, liver and other bodily parts, sautéed in vinegar, onions and garlic.

In the Pigar-pigar Festival, a culinary competition will be held to be participated in by every eatery on Galvan Street serving the delicacy to showcase their creativity and expertise in cooking it and its overall presentation.

There will be five awards: Best Stall Design with a P10,000 cash prize, and P1,000 each for the Best Chopper, Best Mixer, Best Mixture and Most Orderly eatery.

During the Pigar-pigar Festival, two platforms will be installed on Galvan Street where famous bands and celebrity comedians will perform.

The event will also feature a song-and-dance contest for pigar-pigar servers and waiters. – LM
