Portable fish smoking machines built by PSU

A portable fish-smoking machine designed and built by the Pangasinan State University (PSU) was showcased during the Farmers and Fisherfolks Festival in Alaminos City on May 12, 2006.

A fish-smoking demo using the said machine built at PSU’s Technology Business Incubator (TBI) in its Urdaneta City campus was among the highlights of the said festival.

The portable fish-smoking machine was launched in Barangay Carmen West in Rosales, Pangasinan On October 25, 2005.

The portable fish-smoking machine is made of stainless steel, equipped with smoke damper, temperature gauge, burner and ash pit. It was designed and fabricated by Engineers Rodolfo E. Soriano and Alfredo D. Apolinar of PSU Urdaneta City.

Fish smoking is a traditional method of preserving fish. The fish smoking process is composed of salting, drying and smoking. Salting and drying reduces moisture, which is a spoilage agent, while smoking produces an attractive color and enhances the taste of the finished product.

Smoked fish or “tinapa” is one of the main sources of livelihood in Rosales, Pangasinan. In fact, Barangay Carmen West in the said town is a turf of smoked fish entrepreneurs. Smoked fish entrepreneurs in the town say that they have inherited the livelihood from their great grandparents.

Rosales Mayor Ricardo Revita, described the portable fish smoking machine as “sanitary, cost efficient, environment-friendly and effective.”

The design of the portable fish-smoking machine was based on the suggestions of a smoked fish operator in Carmen West, Rosales, Pangasinan, Ms. Josephine Judan, the project cooperator. (Erwin G. dela Rosa, PSU Research and Extension Staff)
