TINAPA MAKING

TINAPA MAKING — A master cook prepares trays of boneless Bangus intended for smoking at a Tinapa-making factory in Bonuan Gueset. Tinapa making is one of the sources of income of fisher folks, which is usually done in two-stage process. First, brine the fish (cooking it with water and salt) and smoke it to give it a smoky taste. (Punchphoto by Willie Lomibao)
