Brgy Salapingao wins Bangusine’s “Best family recipe”

BARANGAY Salapingao’s recipe of creamy garlic butter Tuscan bangus fillet was adjudged this year’s best bangus family recipe during the 2019 Bangusine: Family Recipes with a Twist at the city plaza on April 24.

The winning recipe, prepared by Mary Grace Lopez De Vera, earned the highest average from the board of judges composed of Kitch Rodriguez of Unilever Philippines; King Emmanuel Cuison, a culinary instructor at Lyceum-Northwestern University; and Nancy Mejia, former president of the Nutritionist-Dietitian Association of the Philippines – Pangasinan Chapter.

De Vera said the recipe was inspired by a dish made by a close friend’s aunt that used a different fish.

“This time, we used the Dagupan bangus because its distinct flavor helped elevate the dish. It’s also one way of paying homage to my father who works hard as a fisherman in the city,” added De Vera.

Her team received P5,000 as cash prize for their winning recipes while non-winners received P2,000 each as consolation prizes from the judges.

The other recipes featured were bangus roll with ampalaya twist (Tebeng); bangus binalot (Mayombo), tortang bangus twist escabeche (Malued), bangus tinola (Lucao), potcherong bangus (Lasip Chico), bangus crabcakes over broccoli puree with mango beurre blanc (Herrero-Perez), bangus croquettes with béchamel and white garlic sauce (Caranglaan), tokchong bangus (IV), and seared bangus with creamy spinach and mushroom sauce (II & III).

This year’s competition was facilitated by the City Nutrition Office under Anna Mariel Lopez, with Unilever Philippines and Petron Gasul as partners.
