Mushroom chicharon, anyone?

NATIVIDAD–The Department of Science and Technology (DOST)-Pangasinan Satellite Office is promoting mushroom chicharon among mushroom growers’ associations, the beneficiaries of its Small Enterprise Technology Upgrading Program.

On July 10, DOST concluded its lectures on mushroom chicharon for Natividad Mushroom Growers’ Association, Inc. (NMGAI) which had availed itself of an autoclave machine for the efficiency of the group’s sterilizing process on mushroom production.

The NMGAI requested to undergo a training on mushroom processing particularly on chicharon making to add up to the association’s products that would help them to expand their operations.

The DOST satellite office, in partnership with Dr. Anabella Valdez of DMMMSU-SLUC as the trainer, coordinated in the mushroom chicharon making.

The training was attended by the association’s officers and members and other mushroom growers from Asingan town and San Carlos City, both in Pangasinan.

Valdez, the trainer, said she is happy with the enthusiasm of the group, noting their abundant mushroom production.

She discussed food safety to ensure long tern acceptance of the product.

The group made three variants of mushroom chicharon or chips: nutmeg, batter and cinnamon flavor. The group plans to experiment on other variants.

The association encourages more growers from Natividad to endorse mushroom products as their One Town One Product and welcomes other local government units to join mushroom growing training. (Eva Visperas)
