Calasiao puto-makers innovate to survive challenges
CALASIAO – Traditional ‘puto’ makers of Calasiao are continuously innovating in order to stay in business and survive the challenge of the times.
This trend was articulated by Mary Decena, 60, of barangay Dinalaoan, one of the biggest ‘puto’ factories in Calasiao, who said they have since discarded the crude process of making ‘puto’ in order to produce more quality products.
She said the ‘puto’ makers have acquired mixers and spent time and resources to train their workers to produce quality ‘puto’ that can be sold locally and even abroad.
With their mechanical mixers, she said they produce the best tasting puto in the market through the most sanitary process.
Now 25 years in the business, Mrs. Decena admitted that she and husband inherited the factory from her late-in laws who were the pioneer puto-makers of barangay Dinalaoan.
She said that by making and selling ‘puto’ alone, she and husband Dominador, were able to send all their five children to college and who have all become professionals.
With 12 workers, the family grounds three sacks of rice daily for ‘puto’ which they sell in their store in the Poblacion and in other outlets including hotels in Metro Manila.
Mrs. Decena said they have sent some of their products to Hawaii, Guam and Los Angeles and received very positive feedbacks indicating that not only Filipinos but also Americans have developed good tastes for Calasiao ‘puto’.
