Simbang Gabi and coffee

COFFEE is the second most consumed beverage in the world (after water) and there are several reasons why Filipinos love their coffee during Christmas, the happiest time of the year.

It’s no mean feat to wake up as early as 2:00am so one could get to church in time for the traditional Simbang Gabi (pre-dawn mass) that starts as early as 4:30am—and to do it nine days in a row, from December 16 till Christmas Day.

Coffee not only wakes us up so we can prepare for our trip to the church but also helps keep the mind alert, focused and open to the spiritual significance of the simbang gabi. Then, after the mass, coffee becomes the perfect match for bibingka and puto bumbong (two varieties of rice cakes that are usually sold outside the church). Filipinos usually buy these delicacies and take them home for breakfast for the whole family to enjoy.
